Thank you for sharing your recipe!! We make this in our Cuban household as well, but include saffron as an additional spice when found at an affordable price. We also don't include diced tomatoes, but often top the arroz with pimento olives :)

You’re welcome! I am actually quite interested in discovering the differences in the various types of Latin cuisine so I am always eager to hear your more Cuban-inspired perspective. 

I’d hesitate to say the dishes I grew up with are entirely Mexican - they’re more Tex-Mex which does seem to have its own distinctions. My family has done arroz with and without the diced tomatoes, and the canned version is my adaptation. I am gonna try it with saffron soon, that would be fun!

I want to try to share more of my Tex-Mex recipes but a lot of them are personal constructs of remembered flavors and phone conversation with my mother or aunts. I refused to learn to cook when I lived back home so I’m left reconstructing them now.
