Ingredients ROLLS 1 tablespoon water, warmed (about 105-115°F) 6 tablespoons (75 g) granulated sugar, divided 1 packet (2 ¼ teaspoons) active dry yeast 1 cup (245 g) whole milk, warmed (about 105-115°F) 7 tablespoons (99 g) unsalted butter, melted, divided 1 teaspoon kosher salt 1 large egg, room temperature 3 ½ cups (444.5 g) bread flour CINNAMON HONEY BUTTER ¼ cup (½ stick / 57 g) unsalted butter, softened 2 tablespoons confectioners' sugar 2 tablespoons honey ½ teaspoon cinnamon Instructions ROLLS In the bowl of a stand mixer with a dough hook attachment, combine the warm water, 1 teaspoon of sugar, and yeast. Let it sit for about 5 minutes until it becomes foamy and bubbly. Add the remaining sugar, warmed milk, 6 tablespoons of melted butter, and salt to the yeast mixture. Mix until just combined. Incorporate the room temperature egg and mix until fully combined. Gradually add the bread flour to the mixture and blend for about 3 minutes on medium-high speed. Scrape the dough to the center of the bowl as needed. Knead the dough on low speed for 3-4 minutes until it becomes smooth and elastic. Lightly spray a large bowl with nonstick cooking spray and place the dough inside. Cover it with a clean kitchen towel or plastic wrap and let it rise in a warm area for 1-2 hours, or until it has doubled in size. Lightly spray a 9×13-inch baking dish with nonstick cooking spray and set it aside. Once the dough has risen, gently punch it down to deflate. Divide the dough into 12 equal pieces, either by halving until you reach 12 or rolling it into a log and slicing it. Shape each piece into a smooth ball and place them evenly in the prepared baking dish. Cover the rolls with a kitchen towel and let them rise in a warm spot for about 30 minutes, or until they've doubled in size. Preheat the oven to 350°F as the rolls are rising. Bake the rolls for 12-15 minutes, or until they turn a beautiful golden brown. Remove them from the oven and brush the tops with the remaining tablespoon of melted butter. Serve warm alongside the cinnamon honey butter. CINNAMON HONEY BUTTER In a medium bowl, combine the softened butter, confectioners' sugar, honey, and cinnamon. Mix well and serve with the warm rolls.
