These Watermelon Cupcakes are a tasty and fun treat that look just like little watermelons. They are great for events and parties in the summer!
Ingredients: 1 box white cake mix. 1/2 cup vegetable oil. 3 large eggs. 1 cup watermelon puree. 1/4 cup mini chocolate chips. 1/2 teaspoon watermelon extract. Red and green food coloring. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 2 tablespoons milk. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners. In a mixing bowl, combine the white cake mix, vegetable oil, eggs, and watermelon puree. Mix until well combined. Add a few drops of red food coloring to the batter to achieve a watermelon pink color. Stir in the mini chocolate chips and watermelon extract. Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. While the cupcakes are baking, prepare the frosting. In a separate mixing bowl, cream the softened butter until smooth. Gradually add in the powdered sugar, milk, and vanilla extract. Mix until the frosting is light and fluffy. Adjust consistency with more powdered sugar or milk as needed. Divide the frosting into two bowls. Tint one bowl with green food coloring to create the watermelon rind color and the other with red food coloring for the watermelon flesh color. Once the cupcakes are completely cool, frost the top of each cupcake with the pink frosting watermelon flesh and use the green frosting watermelon rind to create a border around the edge. You can also use mini chocolate chips as watermelon seeds by placing a few on top of each cupcake. Serve and enjoy your delicious watermelon cupcakes!
