Did getting double mutated change anything about Donnie aside from his appearance? Like did it change his personality, tastes, fighting style, and the like? Or is he mostly the same but just with wings and a tail?

FYI while reading this answer, keep in mind his brothers DONT KNOW about the secondary mutation (hes been keeping it secret for a bit). He has an effective way of completely hiding the new mutation and making himself look like normal 👀 but making himself look normal does come with a couple of consequences.
YES, yes yes yes there are other changes. His taste leans more towards meat now, well- as a softshell he probably already had a love of meat/seafood and similar things, but now its just a liiiiittle more noticeable. He probably likes chicken allot more rn, and the urge to bite his brothers is probably a little stronger too.....
Personality? Not so much, maybe an increase in "cat energy" but his personality already resembles your typical manticores so theres not much of an effect or change to that aspect xD.
It absolutely affected his fighting style, hes WAY tougher now and can take a hard hit and brush it off pretty quickly!
Also -> "In certain medieval legends, the Manticore is described as having nearly invulnerable skin, which makes it impervious to conventional weapons."
The battleshell isnt really needed for protection anymore since even his shell became tougher along with the rest of him. But now theres the challenge of hiding how much stronger he is in a fight when around his brothers, he doesnt want to tip them off because any questions that come close to the truth will make him fumble with an obvious lie, and then hes in real hot water if they start prying...
He also does infact have new extra abilities/hidden changes that arnt visible, such as:
His tail is venomous ofc, and the spikes down his spine are not something you want to scratch yourself on....
Popular ability to note that manticores have a "man-eating hunger" which- probably wont change Donnie much when you think about it? Lmao.
"Manticores are often depicted as more intelligent than typical animals" he didnt lose his smarts when getting double mutated, thats for sure heheh.
Manticores have increased flexibility too, and Donnie definitely benefits from that! Thankfully being a softshell means his shell is already a little flexible, buts it even moreso now (and that lets his wings move around properly too)
Theres tons of miscellaneous manticore abilities he may or may not have, i havent exactly decided on them all yet. Hes not going to be jacked up on crazy super powers xD
I mentioned "cat energy" earlier, he may or may not be more inclined to chur and purr, and he gets very good at taking cat naps.
He can also breathe fire 👇 something he discovers much later on when he gets sick >:)
