With Easter rapidly approaching, I thought that I would revisit some good old-fashioned Italian recipes.
Before I left for college, I would go over my Nonna’s house with my family and help out - and try out - the different types of foods: pizza rustica (meat pie), wheat pie, fioni (a kind of pastry that’s stuffed with a mixture of cheese and pepper), and an Easter bunny cake.
Okay, so maybe that last one isn’t Italian, but I like it anyway!

Ingredients (makes three pies)
3 lbs of ricotta
9 eggs
1 1/2 cups of sugar
1 orange – with the skin grated and squeezed
2 cups of wheat
Steps
First, boil two cups of wheat until it’s soft.
Secondly, mix all ingredients together (my Nonna often uses her hands, because the mixture can get so thick).
Thirdly, divide among three pie shells (my Nonna usually makes her own, but store-bought will work, too).
Lastly, bake at 350 degrees until the pie is golden brown and the top and center has set.
And there you have it - an authentic Italian dessert made for Easter. Buon appetito! Enjoy!
