Hedgerow at White Lyan, London: Mr Lyan gin, bramble tea, sourdough, lime and redcurrant soda. My final stop in London was to this internationally acclaimed bar, which prides itself on breaking every rule possible: no ice to be found anywhere in the bar, all cocktails are premixed and measured by weight, no fresh juice, etc. I'm not sure I'd want every bar to work this way, but I'm certainly glad this one does. It allows them to do things and go places others can't, and makes for something completely unique: truly alien by current standards. Not to mention, the drinks were fantastic.
