We sold 13 kilos in 3 weeks, more than any other restaurant group on this earth because we priced them reasonably and we served them generously. #WhiteTruffleMadness week this year is Friday November 16th to Sunday November 25th and the #CrispyEgg with shaved #WhiteTruffles is the #CrownJewel and least expensive option of that week Nothing works as well to showcase #AlbaWhiteTruffles and the irony of the cheapest food product working best with the most expensive should never be lost on us Here is the #CrispyEggMethod again to get you amped up and ready for the season Get a very clean stainless steel sauté pan with nothing in it super hot first. Oil should smoke on contact with the pan but not ignite and easily coat the pan well. Egg goes in immediately carefully from a bowl after the oil and should explode and bubble up quickly on contact. Season generously with sea salt and herbs. #WhiteTruffleMadness ALERT Saturday (tomorrow) will be our last day with #WhiteTruffles this year. I originally thought we would make it to this Sunday the 20th but it's just not looking good folks. We are overbooked and once we start shaving these bad boys in the dining room the smell sets off a chain reaction like nothing we have ever seen in the 16 years we have been doing this.
