OKAY LETS GO First up we have Brouge.
Gameplay wise it is a lighter and more accessible version of Nethack, with comepletely ASCII based graphics BUT it does an extremely good job using them, creating very visually appealing and easy to understand graphics. You should find it less complicated and requiring less research to do well in compared to most other rougelikes.
And then we got IVAN (Iter Vehemens ad Necem)
I have linked a recommended continuation/variant of the game because the base game has not been updated since 2005. IVAN is unique in that it involves a LOT of silliness and humor and one very special mechanic. every humanoid character including yourself is broken up into a number of limbs. you can lose these limbs, very easily actually. and then its up to you to find NEW ONES. or pray for new ones or get some one to sew your old ones back on. whatever you want. you can get legs made of bananas and arms made of marble if you like. Its quite difficult from the get go though because of lots of very unpredictable and dangerous situations. I rarely get through the first dungeon and its only something like 4 levels deep.
And now Cataclysm: Dark Days Ahead.
This one is bloody complicated and hard, but i really like it. its set in a post apocalyptic world that on the surface just looks like a boring zombie thing, but theres actually a lot more than that out there. Theres tons of eldritch beasts and creatures from other dimesions and giant bugs and triffids. its very much a survival game, you gotta find and make weapons and food and shelter, very cool. very hard. Graphically its okay, most things have a graphical tile, but you will also tend to find many that dont, and so are just represented by a big pink no symbol.
ADOM, you probably know something about already.
It was recently upgraded with a new sorta rendering system called NotEye, which you can configure ingame with ctrl+m, which i highly recommend cause some of the default settings are dumb. you can remove animations when you move to another tile and other such things, to make gameplay fast and just feel less poopy and clunky tbh. Good game though, Has a mostly persistent overworld between playthroughs, and then randomized dungeons. Is more accessible than most because of recent upgrades and tutorial additions.
Hoo hey its NetHack.
Probably one of the most well known rougelikes, its a direct descendant of one of the original rougelikes. Won a lot of awards, blah blah blah. Nicely complicated, lots of detail. simplistic graphical tiles that work very well. watch out of cocktrice corpses and floating eyes. Im actually just getting lazy in my typing now but this is a very good one lmao.

Its Doom as a rougelike! Actually surprisingly good! Seems like it got graphical tiles since i last played it so thats cool. Obviously focuses more on ranged combat than most rougelikes.
As an endnote I would say to start with Brouge, then go to ADOM and then WHATEVER. It takes a lot of practice to get used to the complicated controls and interfaces, and generally its HIGHLY recommended that you do research on the game's wiki. There's just a lot of very helpful info you aren't really gonna find yourself lmao. if you got any other questions just hit me up!
