A perfect recipe for lighter pulled pork sandwiches, ideal for summer gatherings. The pork is slow-cooked to perfection with a flavorful, tangy BBQ sauce, and served on whole grain buns with a refreshing coleslaw topping.
Ingredients: 3 lbs pork loin, trimmed. 1 cup low-sugar BBQ sauce. 1/2 cup apple cider vinegar. 1/4 cup brown sugar. 1 tablespoon smoked paprika. 1 tablespoon garlic powder. 1 teaspoon cayenne pepper. Salt and pepper to taste. 8 whole grain burger buns. Coleslaw for topping.
Instructions: Garlic powder, cayenne pepper, salt, and pepper should be mixed together and rubbed into the pork loin. Season the pork and put it in a slow cooker. Put the BBQ sauce, apple cider vinegar, and brown sugar in a bowl and mix them together. Cover the pork with the sauce. Put the lid on and cook on low for 6 to 8 hours, or until the pork is soft and can be pulled apart with a fork. Slow-cook the pork and shred it. Then, mix it with the sauce. Toast the whole grain burger buns and put the pulled pork mixture on them to make sandwiches. Add coleslaw on top for a nice crunch. Serve your lighter pulled pork sandwiches right away and enjoy them!
