Ingredients: 1 pound ground buffalo meat. 1/4 cup breadcrumbs. 1/4 cup minced onion. 1/4 cup diced celery. 1/4 cup diced bell pepper. 1 clove garlic, minced. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 4 burger buns. Lettuce leaves. Tomato slices. Red onion slices. Blue cheese crumbles optional. Hot sauce optional. Mayonnaise optional.
Instructions: In a mixing bowl, combine the ground buffalo meat, breadcrumbs, minced onion, diced celery, diced bell pepper, minced garlic, salt, black pepper, and paprika. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat your grill or stovetop skillet over medium-high heat. Grill or pan-fry the burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness. While the burgers are cooking, split and lightly toast the burger buns on the grill or in a toaster. Once the burgers are cooked, remove them from the heat and let them rest for a minute. To assemble the Buffalo Burgers, spread mayonnaise if desired on the bottom half of each toasted bun. Place a lettuce leaf on top of the mayo, followed by the buffalo burger patty. Add tomato slices and red onion slices on top of the patty. If you like it spicy, drizzle hot sauce over the burger or add blue cheese crumbles for extra flavor.
