To celebrate the New Year I made these beautiful poppy seed window cookies. Inspired by a linzer cookie, this tender, buttery cookie hit all the right marks for me! I much prefer making cookies that take time and precision over simple cookies.
@susanspungen recently featured this @nytcooking recipe, but they were already on my cookie-bucket list. Their version features blood orange jam sandwiched between the cookies - I used seedless raspberry. They are SO good they melt in your mouth! And because I can’t ever find fault with homemade vanilla buttercream, you can see I filled a few cookies with that, as well. Also delicious!
