Ingredients 3/4 pound unsalted butter, softened at room temperature 1/2 cup granulated sugar 1/2 cup confectioner's sugar 1/2 teaspoon salt 2 teaspoons pure vanilla extract 3 cups (500 grams) all-purpose flour Optional: 1 and 1/2 cups (150g) ground pecans, hazelnuts, almonds, or walnuts Instructions Line 3-4 baking trays with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, salt, granulated sugar, confectioner's sugar, and vanilla extract. You can also use a hand mixer and a large mixing bowl for this step. Start mixing on low speed until the sugars are fully incorporated. Increase the speed to high and beat until the mixture is creamy. Don't forget to scrape down the sides of the bowl at least once to ensure even mixing. Set aside 1 cup of the flour and mix it with the ground nuts if you're using them. Toss to evenly coat the nuts with flour. Gradually add the remaining flour in 2-3 batches while mixing on low speed.
