A hearty and nutritious bean stew perfect for winter comfort. Packed with a variety of beans and aromatic vegetables, this stew will warm you up on chilly days.
Ingredients: 2 cups dried mixed beans. 1 onion, chopped. 3 carrots, diced. 3 celery stalks, chopped. 4 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon smoked paprika. 1 bay leaf. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Rinse the mixed beans and soak them in water overnight. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Saut until vegetables are tender. Add minced garlic and saut for an additional minute. Drain and rinse the soaked beans, then add them to the pot. Pour in diced tomatoes, vegetable broth, thyme, smoked paprika, bay leaf, salt, and pepper. Bring the stew to a boil, then reduce heat and simmer for 2 hours or until beans are tender. Adjust seasoning to taste and discard the bay leaf before serving.
