Guillermo is still a human, the Helsing blood made him immune to the vampire curse. He decides to become a werewolf instead.
Derek dies because of the Helsing blood. Guillermo is horrified but all the money makes up for it.
Guillermo becomes a shockingly powerful vampire because of the Helsing blood, which makes him able to overpower Nandor and mind control other vampires.
Bonus:
Nandor becomes so upset by scenarios #2 and #3 that he wishes Guillermo back.
