@Regrann from @matsecooks - BALLS. These yam balls are gonna be one of the best you've ever had. Crispy crunchy on the outside and the inside melts in your mouth. INGREDIENTS. 4 slices of yam. 1/2 tsp curry. 2 eggs. 2 tbsp butter. 1/2 tsp ground dried pepper - optional. Salt to taste. 2 cups cornflakes. 1 tsp black pepper. Oil for frying. DIRECTION. 1. Peel and boil yams with water and salt until cooked. 2. Mash with a food processor or with a mortar and pestle until it is smooth like pounded yam. No lumps please. 3. Now, in a bowl, place the pounded yam, add curry, dried pepper and combine nicely. Then follow with the butter and whisked egg and blend in properly. 4. Cut the yam dough into small balls and roll them on the palm of your hands until they are perfect balls, make sure the sizes are similar. Place on a dry tray and repeat the process until you exhaust the yam dough. 5. Place cornflakes in a polythene bag and crush with a rolling pin or your hands into smaller flakes. Set aside. 6. Crack open and whisk the remaining egg in a bowl. 7. Heat up oil. 8. Pour the crushed cornflakes on a tray. Add the black pepper and combine. 9. Dip balls into the egg in the bowl. Then coat it with the spiced cornflakes and fry in hot oil for a few minutes. Transfer the fried balls unto a paper towel to drain. Clear out bits of flakes from the oil with your slotted spoon and repeat the process until you finish frying them all. SERVE HOT. #YamBalls #FoodPhotography
