Half-Moon Croquettes with Garlic Aioli from TERA Online

A traditional croquette is, in its most basic form, a fried bomb of pure deliciousness. It usually contains mashed potatoes and some form of meat, as well as numerous other options including cheese, herbs, onions, mushrooms, and other vegetables. The possibilities are endless. That being said, these croquettes are quite basic but no less delicious for being that way. They’re stuffed with spiced lamb and rolled in panko to give them an extra crispy crunch. The garlic aioli compliments them very well and I’ll be the first to say that I may have spoiled my dinner by eating a few too many of these tasty croquettes.

Ingredients:

(Makes 12-15 croquettes)

For the croquettes:

3 whole russet potatoes, peeled and roughly diced

7 Tbsp butter, divided use

1 Tbsp salt

1/3 cup heavy cream

4 Tbsp olive oil, divided use

1 pound (16 oz) lean ground lamb

1 tsp ground coriander

1 tsp ground cumin

1.5 tsp paprika

2 cloves minced garlic

1/2 tsp salt

1/2 tsp ground pepper

2 eggs, lightly beaten

Panko bread crumbs

For the garlic aioli:

3/4 cup mayonnaise

1/2 tsp ground pepper

3 cloves minced garlic

3 Tbsp lemon juice

1 tsp salt

1/2 tsp ground pepper

To make the mashed potatoes, put the chunks into a large pot and cover with water. Boil until they’re soft when you poke hem with a fork and then drain them. Add 1 Tbsp of salt and mash until smooth. Add 4 Tbsp of butter and mix until the butter is melted and evenly mixed. Add the cream and mash into the potatoes. You can also add some black pepper here if you have a mind to. Set aside and allow to cool.

In a large nonstick pan, add 2 Tbsp of olive oil, he ground lamb, coriander, cumin, paprika, 1/2 tsp salt, 1/2 tsp pepper, and 2 cloves of minced garlic. Heat over medium heat and break apart and mix with a wooden spoon until the lamb is completely browned and the seasonings well-incorporated. Remove the lamb to a paper towel-lined plate and drain off the remaining fat and oil from the pan.

Combine the lamb with equal amounts of cool mashed potatoes. Add some more mashed potatoes as necessary to make the combination easy to handle and mold. Using a 1/4 cup measuring cup (about 2 oz), scoop up the lamb and mashed potato mix and firmly pack it into an oval shape that is no more than 3/4 inch thick. Repeat until there is no more mix left. 

In two separate dishes, have ready the beaten eggs and the panko bread crumbs. Using the same pan that the lamb was cooked in, add 2 Tbsp olive oil and 3 Tbsp of butter and heat over medium heat until it begins to bubble. Carefully dip both sides of the croquette in the beaten egg and then move to the panko breadcrumbs, evenly coating both sides. Add the croquettes to the hot butter and olive oil and cook in batches of four, about one and a half minutes per side until they are crispy and golden brown. Remove to a paper towel-lined plate. You may need to add more butter and olive oil to the pan between batches. 

To make the garlic aioli, mix all of the ingredients together in the bowl of a food processor until combined and chill. Serve it on top of, under, or all over the lamb croquettes.
