Ingredients: 2 medium-sized eggplants. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup Greek yogurt. 2 cloves garlic, minced. 1 tablespoon fresh lemon juice. 1 teaspoon za'atar spice blend. Fresh parsley leaves for garnish.
Instructions: Preheat your oven to 400F 200C. Slice the eggplants into 1/2-inch thick rounds. Brush both sides of the eggplant slices with olive oil and season with salt and pepper. Place the eggplant slices on a baking sheet and roast them in the preheated oven for about 25-30 minutes, or until they are tender and golden brown. Flip them halfway through cooking. While the eggplant is roasting, prepare the garlic yogurt. In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, and a pinch of salt. Mix well and set aside. Once the eggplant slices are done, remove them from the oven and let them cool slightly. To serve, arrange the roasted eggplant slices on a platter. Drizzle the garlic yogurt mixture over the eggplant slices. Sprinkle the za'atar spice blend evenly over the yogurt and eggplant. Garnish with fresh parsley leaves.
