This recipe combines the rich flavors of tender lamb with the aromatic spices of za'atar, complemented by a savory Israeli wine sauce. The marinade infuses the lamb with Mediterranean-inspired flavors, while the wine sauce adds depth and complexity to the dish. Paired with a glass of Israeli red wine, this dish is a perfect representation of the vibrant culinary culture of Israel.
Ingredients: 1 lb lamb, cubed. 2 tbsp olive oil. 2 tbsp za'atar seasoning. Salt and pepper to taste. 1/4 cup Israeli red wine. 1/4 cup beef or lamb broth. 2 cloves garlic, minced. 1 tbsp honey. 1 tbsp lemon juice. 1 tbsp chopped fresh parsley, for garnish.
Instructions: In a bowl, combine cubed lamb with olive oil, za'atar seasoning, salt, and pepper. Marinate for at least 30 minutes. Preheat grill to medium-high heat. Thread marinated lamb onto skewers. Grill lamb kebabs for 8-10 minutes, turning occasionally, until desired doneness is reached. Meanwhile, in a small saucepan, combine Israeli red wine, broth, minced garlic, honey, and lemon juice. Bring to a simmer over medium heat and let it reduce by half, stirring occasionally. Once kebabs are cooked, remove from grill and let them rest for a few minutes. Drizzle the Israeli wine sauce over the lamb kebabs and garnish with chopped parsley before serving.
