Zucchini Roll

Ingredients:
2 medium zucchinis (sliced thinly lengthwise)
½ cup hummus (or vegan cream cheese)
¼ cup roasted red peppers (sliced)
¼ cup fresh basil (or spinach leaves)
2 tbsp olive oil
Salt and pepper to taste
Making Process:
Using a mandoline or knife, slice the zucchinis thinly lengthwise.
Spread a thin layer of hummus on each zucchini slice.
Place a slice of roasted red pepper and a basil leaf on top.
Roll up the zucchini slices tightly and secure with a toothpick if needed.
