I might be reaching so feel free to disregard my perspective, but personally I see the choice of making Guinevere's skin color blue as a slight jab at Disney's current approach to representation.

Making her have a fantasy skin color makes it so It's easy for literally anyone to theoretically see themselves in her. She's neither White, nor Black, nor Latina, nor Asian, etc. She's blue.

So any little girl could potentially picture themselves as her. Sounds good in theory, but the final result is essentially an icon that doesn't truly relate to anyone.

She's too fantastical, too unrealistic, too out of reach. There isn't any one in real life that looks like her, making Guinevere an icon first and a character second.

So what we're left with is a character that's trying to please everyone and ends up pleasing no one at all.
