ok so im watching this show Fire Country (2022-) and the main like fire captain of this prison camp is played by the same guy who plays Daniel Espinoza in Lucifer (2016-2021) and every time he comes on screen and does some corny shit i just have to stare and go "DETECTIVE DANIEL ESPINOZA WHAT ARE YOU DOING HERE SHUT UP"
anyways that's it. i just had to put this somewhere. because it's annoying to see this guy be all nice and casual and like "y'know, i was a criminal, too" and just think "shut up daniel you're a crooked cop who fumbled a baddie"
ANN SATHER'S CINNAMON ROLLS
Been living out of the same small overnight bag for the past couple of weeks–which isn’t actually a complaint because I’ve really been enjoying my time in the sky. However, this has meant an empty fridge, and no downtime to relax in my kitchen.
So with #Nemo’s visit this weekend, I decided it was a good time to “hunker down” (this trite saying makes me laugh every time I hear them say it on NY1) and get my hands dirty in my lil’ cook shop. I enjoyed a morning cup of coffee, finished a short book, and decided to experiment with my first packet of yeast. ;) I could have done bread, or even fried up some doughnuts, but I wanted to do something a little more indulgent. Snow days have a funny way of doing that to us.
Inspired by one of the very first The Best Thing I Ever Ate episodes, I’ve always dreamed about visiting Chicago for Ann Sather’s famous cinnamon rolls. Big dreams–I know. :) So since my recent travels had me in LA and Miami but no where near the midwest–I thought, why not try these out for myself. Hoping to get out there in the near future and see how far off, but for this weekend, I think these will do just fine.
ANN SATHER’S CINNAMON ROLLS
INGREDIENTS
CINNAMON ROLLS
Makes about 12 rolls or 24 mini rolls
Adapted from Ann Sather’s original recipe
1 envelope (¼ ounce) active dry yeast
1 teaspoon sugar
¼ cup warm water (110 degrees)
1 cup milk, scalded, cooled
¼ cup (2 ounces) butter, melted
1/3 cup sugar
1 ½ teaspoons salt
2 ½ to 3 cups all-purpose flour
4 tablespoons (¼ cup) butter, room temperature
½ cup brown sugar
1 tablespoon ground cinnamon
¼ teaspoon nutmeg
¼ teaspoon orange zest
POWDERED SUGAR ICING
Adapted from Better Homes and Gardens New Cookbook
Makes about ½ cup
1 cup sifted powdered sugar
¼ teaspoon vanilla extract
1 tablespoon milk, plus additional as needed
DIRECTIONS
In a large bowl, stir the yeast and 1 teaspoon of sugar into the warm water and let stand for 5 minutes. Stir in milk, melted butter, 1/3 cup sugar, salt and 1 cup flour. Beat with a spoon or an electric mixer until smooth.
Gradually stir in 11/2 cups flour, keeping the dough smooth. If the dough is still moist, stir in 1 tablespoon flour at a time to make a soft dough. Cover with a dry cloth and let it rise in a warm place until doubled in bulk, about 1 hour.
Heat oven to 350 degrees. Divide the raised dough in half. On a lightly oiled board, roll out (with a lightly floured rolling pin) and stretch 1 piece of dough to make a 12-by-8-inch rectangle. Spread 2 tablespoons of the soft butter over the top of the dough. Sprinkle with brown sugar and cinnamon. Beginning on the long side, roll up tightly, jelly-roll fashion. Repeat with remaining dough.
Cut the dough into 2-inch slices. Place on greased and floured baking sheets. Let the dough rise (in a warm place) until doubled in bulk, about 45 minutes.
Bake in the oven for 12 to 15 minutes, or until golden brown. Allow to cool and set for 5 minutes.
For the icing, combine sugar, vanilla and 1 tablespoon milk in a small bowl. Stir in additional milk, 1 teaspoon at a time, until icing is loose enough to drizzle.
Best served warm….with a sugar glaze.
With flour covering every inch of my kitchen, I felt happy and accomplished. My second cup of coffee was even more enjoyable after all the mixing and rolling and patiently waiting that went on in my kitchen. Now on to cleaning and prepping for my next project: meatballs. :) I’m a crazy one when it comes to QT in the kitchen–but if I’m “snowed in” you best believe I’m going to make the most of it.

my quest to make the best "upgraded" boxed mac n cheese
so, tonight, at 10:30pm, i decided i was hungry. so i made some Kraft Classic boxed mac n cheese. however, i did not follow the instructions on the box to a t. no no no, i did some experimenting.
you see, i find that every time i make this delicacy, the noodles are always too mushy, the flavor too boring, and also i never get quite enough because i have to usually share with my sister and dad, and they take bigger servings than me because i'm nice. HOWEVER! that is to change.
i decided to cook the noodles for 6 minutes and 30 seconds instead of the box's recommended 7-8 minutes, as i thought that would be enough to cook the noodles to a nice al dente. but oh, was i wrong. i decided to test the noodles at the 5 minute 30 second mark, and they were PERFECT! so, they were drained early.
i also decided not to shake the strainer, and attempt to leave some of the pasta water in the pot, to help emulsify the butter and create a pseudo-butter sauce. it made the overall sauce more liquidy, so i will shake the noodles next time, but not a lot. just a little shimmy.
next, i went to put milk in it, but alas! we are out of 2% milk! whatever to do! so, i checked one of the THREE???? open chicken broth containers in the fridge (this is all on my sister), and it smelled fine, and i used about 1/8 cup of chicken broth, and another 1/8 of half and half, as my dad uses it in his coffee.
i then added it all together, and although it did come out liquidy as previously stated, this is by far one of the best boxes on mac n cheese i have ever had. i also added some freshly ground pepper on top, to add a little more flavor.
however, i know i can still improve on my techniques. i know that there will be better boxed mac n cheeses made by my hand. therefore, i am now on a quest to make the best boxed mac n cheese i can, always using Kraft Classic in order to make sure that everyone could also follow along if you wish to do so. i know i would enjoy little upgrades to something that is so basic, it is a true neutral food.

am i gonna start using this as an actual blog now? maybe. i kinda just wanna rant about powerpoints for a second. because why the fuck are professors so fucking bad at making powerpoints????
ok, so i'm a social work/psych major, as you may have guessed from my bio and maybe my last post. you'd expect people in academia to be good at making academic powerpoints, right? WRONG
my social work professor, let's call them Dr. S, they love making powerpoints by just copy-pasting shit from the textbook or whatever other source, and then not re-formatting it to fit into the powerpoint. or, they'll write some of the slides themself, which seems fine, until you realize their background is in corrections so everything they right is straight to the point, which sometimes makes zero fucking sense. or, they'll make insanely confusing grammatical errors, and not fix them, which makes me have to decipher what the fuck they're trying to say.
and you may be asking, "julie, why don't you just take notes on their lecture?" because i have to hand write all of my notes. not because i can't type, but because i don't retain any information unless i hand write it down. sometimes, in high school, i would take invisible notes with my finger on my desk, just to retain some of the information if it wasn't enough to take actual notes on.
maybe one day i'll post some random pages of my old notes, since i kept all of my notebooks from high school, as well as keeping all of my notebooks from the classes i've taken so far, since i might want to look back at them in the future (which would honestly be kind of difficult since i write exclusively in sloppy cursive because my print is actually that bad). i'm kind of proud of the way i take notes, since developing my technique in high school and tweaking it along the way. it's not the fastest way to take notes, oh no, but it helps me retain the information, y'know?
anyways, my break timer just went off, meaning i have to get back to taking notes. that's my life. taking notes. always has been, always will be.

it’s been two years, but i think that an icon like her deserves to be known about by more people.
her name was freddie oversteegen and she, at the age of fourteen, along with her older sister truus who was 16 and their friend johanna “hannie” schaft who was 19, was a part of the netherlands most famous all female resistance cell which was dedicated to fighting the nazis and dutch traitors.
among other things, they are known to have blown up bridges and railroads, smuggled jewish children from concentration camps and, as the tweet mentions, seducing nazis and then shooting them with guns that they had hidden in their bike baskets. freddie is quoted as having said that they “had to do it.” and that it was a “necessary evil, killing those who betrayed good people.”
though freddie and her sister truus were both lucky and survived the war, hannie schaft wasn’t. at the age of 24, hannie was caught and around three weeks later was executed by nazis, only 18 days before the netherlands were eventually liberated. she was shot with one only wounding her, and, before the final shot, hannie is quoted as having told the executioners: ik schiet beter, which translates to “i shoot better.”
though she didn’t survive, hannie is recognized as a national icon and a face of the dutch resistance, with her story even being retold in a movie from 1981 called “the girl with the red hair.” along with this, truus also founded the national hannie schaft foundation in 1992, on which freddie served as a board member.
freddie, at the time of her death, was 92 years old and the last surviving member of the resistance cell, with truus having died two years earlier at the age of 92.
though these women and all that they did played an important part in the dutch resistance, they are often overlooked in history outside of the netherlands. it’s important that they are remembered and that their work to save people isn’t forgotten. it’s incredible what they did, especially given how young they were, and they deserve more recognition than what they’ve gotten.

starting to use tumblr again because i realized: what potential future patient of mine would look up their social workers tumblr??? so i'm gonna start posting about how taking two classes at a time is basically the max amount of classes i can handle, but if i were to take three at a time i would just want to kill myself constantly. anyways.
i'm taking family systems and group dynamics this semester, and it's pretty chill so far. i didn't do the discussion post for my groups class yet (i fucking DESPISE discussion posts. professors, please stop them) and my professor not only has emailed me about it TWICE, but she CONTACTED THE STUDENT SUPPORT CENTER. how am i meant to tell this woman that i didn't do it on time because the question confused the fuck out of me lmao.
