Whilst I’m watering here is a few sunrise and early morning shots well I had a few coffee espresso shots.
Foraging fruits; more blackberries but I have a few elderberries as well. I found that they may be a good combination. I plan to make a compote with them. I think my blackberries have peaked. Still more to come but I don’t think I will get as much now.
When I got I used a fork to get the elderberries off the stalks. After washing I put about 350grams of elderberries with 150grams of Demerara sugar. Slowly heating them up to release the juices. I mashed them with a potato masher. Strain and sieve. Quick clean of the saucepan and add the elderberry juice in with the zest and juice of two lemons. 1.8 kilograms of blackberries and two teaspoons of sweet cinnamon spice. For this amount of blackberries I add in 200 grams of Demerara sugar and 200 grams of honey. Check the taste after its started simmering. I sterilised some kilner jars. I add in a thickening as I don’t want to boil away all the berries. Fill the jars with the compote. The way in which I do the sterilising means the jar are too hot to handle and need a hour or two to cool down.
