Been missing @nickyprosciutto's cooking for a hot minute so I decided to tackle one of his recipes I've been wanting to make for a long time. A variety of sauteed mushrooms (including a butt ton of chantrelles), toasted hazelnuts, and acini de pepe in a brown butter vinaigrette. Buttermilk brined, southern fried chicken parm. I've posted this before but it's worth revisiting because it's so damn good. I don't deep fry chicken too often because it stinks up the place, but when I do, I usually stick with southern fried or karaage style chicken because they're both vastly superior to breaded chicken or even panko in my book. With southern fried you can take all of the little bits of buttermilk and egg mixture that clump up in the flour dredge and mush it to the chicken, creating a much more crispy and craggily crust when you deep fry. Combine that with some homemade marinara, mozz, parm, and pecorino, fresh basil, a side of @flourcitypasta from @superior_merch and you've got the perfect chicken parm. Finally had the chance to see what @christian_a_weber and @bert.weber.146 have been up to at 30 Saratoga Ave over the last year and I gotta say I could not be more impressed. (Check my Stories for a behind the scenes look at the incredible progress they've made.) The new @commonrootsbrewing will easily be one of the most gorgeous breweries we'll have here in Upstate New York. The work @melanie_f_weber and crew at @fronhoferdesign is doing here is equally impressive. (Seriously mind blown at that level of detail in that brewing setup.) So proud of what the Weber family has been able to accomplish here bouncing back after last year's fire.
