This was a delight to make and to eat. Velveting is a wonderful technique and I'm so glad I learned how to do it. If you try it, let me know what you think!

Gochujang, that delicious fermented Korean red chili paste is back. Yeah, a lot of my dishes lately have had it, but I will reiterate that it is my new favorite ingredient. So rich, so versatile, and so good for the gut (since it's fermented). If you try it, please send me a picture and let me know. You can email me or tag me on socials! Slàinte and bon appétit!
Healthy, herby, delicious. I think everything about this could have been with chicken or pork. But, it was fish time and I chose flounder, a wonderfully flaky fish that absorbs flavors well.
From the Home Kitchen: Coffee-Spiced NY Strip with Lemon-Garlic Broccoli
Yes, I’m giving the gochujang a break with this recipe. I love it, but it can’t be the center of attention at every meal. Can it? Your Morning Cup on Your Evening Steak: Coffee-Spiced NY Strip with Lemon-Garlic Broccoli A dry rub that sounds unusual and tastes like it was always obvious, paired with the brightest broccoli you will ever make Coffee on a steak is one of those ideas that raises…
From the Home Kitchen: NY Strip with Black Cherry Gochujang Pan Sauce
Continuing my Gochujang journey. I’m telling you, it’s one of the most versatile ingredients I have ever cooked with. Sweet Heat and a Perfect Sear: NY Strip with Black Cherry Gochujang Pan Sauce A pan sauce that makes people stop mid-bite and ask what exactly is in this, served over saffron-turmeric couscous with roasted mushrooms Some recipes are greater than the sum of their parts, and this is…
From the Home Kitchen: Gochujang-Glazed Chicken Thighs with Sesame Roasted Broccoli
Sticky, Spicy, and Worth Every Minute: Gochujang-Glazed Chicken Thighs A Korean-inspired weeknight dinner with a glaze that works harder than you do There are meals you make because you need to eat, and then there are meals you make because you actually want to cook something. This is the second kind. Gochujang-glazed chicken thighs with sesame roasted broccoli is a complete dinner that looks…
From the Home Kitchen: White Bean Shakshuka with Chorizo
Shakshuka is one of my favorite things to cook. It’s simple to make, takes little effort, and is delish! I decided I wanted some pizazz added to this already pizazzy dish! One Pan, No Apologies: White Bean Shakshuka with Chorizo A bold, spiced dish that works for breakfast, lunch, or dinner, and is better for you than it has any right to be Shakshuka has been a staple across North Africa and the…
From the Home Kitchen: Steak Diane
I wanted something classic. Something with steak. I found a recipe for Steak Diane. I have an aunt named Diana (but everyone calls her Diane). Let’s dive in! Old Flame: Why Steak Diane Still Belongs on Your Table A classic steakhouse dish from the tableside theater era, and everything going on underneath the sauce Steak Diane peaked in popularity sometime around the 1950s, when tableside…
From the Home Kitchen: Anthony Bourdain's Vichyssoise
I apologize for the time lapse between meals. I paused for the Super Bowl (both cooking and blogging) and a few other things. So, the background for this post and recipe is listening to a friend of mine, a former French teacher and current French tutor, talk about French things. It made me want “something French.” French cuisine and language are my favorites, and France is my favorite place to…
Tuscani by Sage & Salt: A (Favored) Review
Full disclosure, I had this setting in my draft folder. Birthday, Thanksgiving, off work, etc. No excuses, just reasons. We absolutely loved our time at Tuscani by Sage & Salt. It’s been a bit since I’ve done an “official” restaurant review. For my birthday on November 20, a group of 5 went to enjoy a meal from the town’s newest “fine dining” establishment, one that rose from the ashes of 600°…
From the Home Kitchen: Thai-Inspired Peanut Chicken with Jasmine Rice

From the Home Kitchen: Instant Pot Mahi-Mahi Tomato Stew
When I talk about my wellness journey, I’m not counting calories or checking boxes. I’m building on my relationship with food in a way that honors both my body and my taste buds. This Instant Pot Mahi-Mahi Tomato Stew is the latest recipe that reminds me why choosing nourishing ingredients doesn’t mean sacrificing flavor—in fact, it’s quite the opposite. The Wellness Within Each Ingredient Let’s…
From the Home Kitchen: Seared Tuna Steaks with Garlic-Ginger Shrimp
Another week, another healthy and delicious meal. Nourishing From Within: A Wellness Journey Through Flavor My wellness journey hasn’t been about restriction or deprivation—it’s been about discovering ingredients that truly fuel my body while delighting Stephanie’s and my senses. From the Home Kitchen: Grilled Chicken with Plum-Gochujang Glaze and Cucumber Salad
In this week’s fantastic offering in the “Tim needs to eat healthier so he can write more blog posts and create more podcasts (and, of course, being a life partner of Stephanie) so he experiments with new recipes” file, I’m offering up something a little different. This is my Grilled Chicken with Plum-Gochujang Glaze and Cucumber Salad. I like sweet heat, but I didn’t know how this would go over.…
From the Home Kitchen: Ginger-Garlic Glazed Salmon with Stir-Fried Bok Choy
Here we are again, friends. Another healthy meal. And, yes… another healthy fish meal. I have really gotten into my fish lately, and because it is really good for me, that’s just a bonus. I’m back to the salmon this week. I wanted something a little more savory with a sweet kick, and that’s what I came up with. I went to the big-box warehouse club with my mother, got some baby bok choy, and…
From the Home Kitchen: Roasted Salmon over Creamy Tomato-Garlic Cavatappi with Sautéed Broccoli
In my latest attempt to create healthier, more flavorful dishes, I decided to use up the last of the dried cavatappi and some of the salmon that I got from the box club warehouse visit. Someone said that pasta seemed like an odd choice with salmon. Well, with fish all together. I said that pasta goes with just about anything. A lot of people eat potatoes with fish. I don’t see a difference…
From the Home Kitchen: Ginger Garlic Tuna & Broccoli Stir-Fry with Gochujang Sesame Drizzle
It has been so long since I’ve posted anything on here, and for that, I truly apologize. Here’s what’s been happening with me: I’ve been swamped, slammed, hella busy. I know everyone says that. Let me explain. I produce around 40-50 podcast episodes each month. I own a radio station, which is luckily run by someone else. I am the sound engineer for the Lewisville-Clemmons Chamber of Commerce, a…
