I should probably tell you though... I’m still gonna make cake. 😜 • Roasted Beet & Avocado Salad with Pistachios and Herbed Cheese • This salad is really good. I ate it the day I made it, the next day, and yes, I’m probably going to eat it today too. You can adapt it with whatever greens, nuts & cheese you like. • Recipe-ish: • Add whatever greens you like to your bowl (I used kale and arugula). Add in chopped roasted beets, chopped avocado, pistachios and cheese (I used a creamy herb & garlic cheese the first time I made this and shards of shaved aged cheddar the second time.
