Ingredients
To Make a Dough
Maida - 1 and ½ Cup
Salt - 1/2 tsp
Baking Powder – ½ tsp
Oil - 3 tsp
Water - Adequate
To Make Egg Filling
Egg - 3
Onion - 1 Chopped
Finely Chopped Green Chilli - 2
Salt - 1 Tsp
Chaat Masala - 1 Tsp
Pepper - 1 Tsp
Dough
Method:
To make the dough
1. In a bowl, add 1 and ½ cup maida, 3 tsp oil, ½ tsp baking powder salt and mix it.
2. Mix properly before adding water.
3. Gradually add luke warm water and prepare the dough.
4. Knead the dough properly for 10 mins until it becomes soft.
5. Cover it and rest for 30mins.
Spicy Dry Potato Curry For Mughlai Paratha.
You can also serve this aloo sabji with Chapathi, paratha, luchi etc.
Ingredients:
1. Potato - 3 medium sizes. (Cut into small piesces)
2. Onion Paste - 1 medium size
3. Tomato Paste - 1 medium size Tomato
4. Ginger, Garlic & Green Chillies Paste - 1 Table spoon
5. Cumin powder (½ tsp).
6. Turmeric powder (½ tsp).
7. Red chilli powder - 1 tsp
8. Garam masala powder (¼ tsp).
9. Salt (as per your taste).
10. Black pepper powder (¼ tsp).
11. Sugar (as per your taste).
14. Oil – As per requirement
Methods of Spicy Potato Curry:
1. Heat a pan / kadai and add adequate oil in it.
2. Add the potatoes in hot oil and fry them.
3. Add turmeric ½ tsp & sat 1/2 tsp and mix well.
4. Add onion paste and fry.
5. Add tomato paste and then ginger, garlic and green chilli paste and mix them well.
6. Add 1 tsp red chilli powder, ½ tsp cumin powder, ½ tsp salt, ½ tsp garam masala in it.
7. Cover the lid and keep it for 2 mins.
8. Add 1 glass of water. When boiling cover it for 10 min in medium flame.
9. Now cook in high flame for 3 mins. When the curry becomes dry then put off the gas.
10. Spicy potato curry or aloo tarkari is ready for mughlai paratha.
11. You can also serve this hot spicy potato curry with any paratha, roti, naan etc.
Paratha & Egg mixture Preparation
1. After 30mins knead the dough and divide the dough into equal portions.
2. Dust it in maida and roll it using a rolling pin. Roll out the dough nice and thin.
3. In a bowl, add beaten eggs, onion, green chilli, ginger, salt, chat masala, pepper and mix them all.
4. For making the Mughlai Paratha - Pour the egg mixture in the center and fold the sides properly. Make sure the egg mixture is sealed completely.
5. Heat some oil in the pan for frying the parathas.
6. Once the paratha is ready, place it in the hot oil and fry it.
7. Fry both the sides properly.
8. Once the paratha turns into golden brown on both sides it is ready to be served.
9. Serve hot with the spicy potato curry & sauce.
