Creamy roasted red pepper bisque Ingredients -6 red peppers -2 tbs butter or olive oil or some other fat -1 large onion of your choice, diced -2 carrots, diced -2 stalks of celery, diced -Garlic, crushed/minced (1-4 cloves depending on whatcha like) -6 cups of veggie (or chicken) broth -1 heaping tbs hot paprika (or sweet paprika, and a pinch of cayenne) -Half & half (for finishing) -Salt and pepper Process Roast the red peppers. You can fire roast them, but I just put them in the oven at 450F for 30-45 minutes until they have a nice, blacck char on the outside. Set them aside to cool. Once cool, peel and remove the stems and seeds. Chop roughly. You'll blend it later. It doesn't need to be pretty. Sautee the onion, carrots, and celery in the butter with some salt and pepper (and thyme if you have some!) over medium heat. Add the garlic and paprika. Sautee for another minute. Add the red peppers and the broth. Bring to a boil, then reduce to a simmer. Let simmer, partially covered for at least 30 minutes (1 hour is best). Taste and season continuously. Wait for the soup to cool a bit before putting it in the blender. (Trust me...). Blend until smooth. Stir in some half & half if you want. Taste and season before reheating (if necessary) and serve! I recommend serving this with a big chunk of Italian bread or focaccia.

Almost exactly a year ago there was a huge storm late at night just like this. I was on the phone with Lori, who was tirelessly supporting me through one of my most difficult times. That night I got all teary-eyed thinking about watching storms on rooftops with Brit in Nicaragua. I wrote last year how often I forget to be in awe of the world, when it truly is awesome. Thanks, Mother Nature, for having perfect timing and for the incredible reminder that the world is so much bigger than just us. ⚡️☁️🌍💚

Father Peter was an incredible priest, supportive friend, creative scholar, and (I still secretly think) The Godfather. It is with a broken heart that I wish you rest peacefully with your God; I'm sure he's got great things to say about you. Thank you for the chance to know you, for the binge-eating Indian food extravaganzas, for the chance to work with you, and for being one of my closest friends as we worked toward our M.A.'s. My relationship with the church has been rocky, but you single-handedly restored my faith in the goodness of humanity. You were the most humble and surprising person I've known. Thank you for always telling me that I'm the smartest girl you know, even though I'm sure that was a lie (priests aren't supposed to do that, Peter!). Thank you for the ridiculous time you brought a bottle of Grey Goose to my apartment to celebrate our graduation. Thank you for our potluck dinners where you made the most incredible food (you seriously were such a Renaissance man). Thank you for laughing with me as you drank Johnny Walker Blue with Alex like total badasses. Thank you for being the first and only priest with whom I will walk down Bourbon Street, shouting about lime green cocktails, and having the time of our lives. Thank you for telling me I'll make it through many tough situations, and thank you for reminding me that I can be strong. Thank you for the gifts you have given me, literal and metaphorical. Thank you for letting me be part of your life. I will never forget you. I'm sure you are hanging out with your God right now, and he's giving you a slap on the back saying, "Thanks for working for me. You did such a great job." You will peacefully and spend the rest of time hanging out in heaven with those you spent your life serving. 🙏 I miss you already.
