Quinoa and white bean burgerš-š=š I adapted this recipe from one I found on Pinterest but put mine in pita pocket with alfalfa sprouts and vegan mayo with avocado, and tomato
Chocolate chip cookies- vegan of course
Mushroom-Asparagus Rissoto In the original recipe called for spinach and thyme but had neither one so I just stuck with the mushrooms and asparagus. However I added black pepper, ground sage, and ground rosemary. Oh so delicious!
Rissotto- Vegan Version
I made rissotto for the first time tonight. All I have to say is that I am so awesome. It turned out so much better than I expected. I adapted my recipe from Pinterest so go to Pinterest and search for my board āVegan Experimentā and username websurfer129.Ā

What to make for a bake sale fundraiser and still be vegan AND still please everyone? Chocolate chip cookiesā¦yes. My favorite cookies of all time but how good will they be with āvegan butterā, which is just a blend of oils and emulsifiers, and no egg to bind it. So Iām going to try a recipe I found at ulive.com āEat Like A Veganā minus the nuts just chocolate. His recipe calls for egg substitute but I really donāt want to invest any more money so Iām going to use stuff I already have. Iām going to try cornstarch slurry (1 tbsp cornstarch and 2 tbsp of water) because it provides a binder (cornstarch) and moisture (water). Transition from Regular Southerner to Mainstream Vegan
Being in the South and a college town, transitioning to vegan has become a production. Things like seitan and tempeh are not present at Wally World or even the nicer Publix grocery stores. Even tofu is a scarcity. But it has become a fun food science experiment. #veganlife#eatlikeavegan
