Probably for the same reason  the biggest feed the world organisations give out almost exclusively vegetarian and vegan food- because it’s cheaper, it’s more sustainable, more efficient per calorie to produce, has a better shelf life and can feed far more people using far less land and resources. Vegan food is also more inclusive of  moral, spiritual and religious beliefs and the dietary requirements which come with them, which is the same reason why the food provided by Sikh langar community kitchens is vegan or vegetarian as well. It’s a wonderful thing that we can feed the poor without harming animals.
