It’s been a while since I’ve posted a recipe but I’ve got a super delicious and fun one for y’all today. It only takes a few ingredients which you probably have at home and it’s a 100% whole, plant-based meal that was easily made zero waste. Here’s what you’ll need:
Ingredients (serves 2)
1.5 cups rolled oats
1 ripe banana
1 cup of water or non-dairy milk (I used homemade sunflower seed milk!)
1 apple
Optional: cinnamon, vanilla, nutmeg, and any other toppings
Method
Start by adding the oats, banana and liquid to a blender (as well as any spices or vanilla) and blend until smooth. Once that’s done, heat up a pan to about medium heat.
While waiting for that, slice your apple horizontally into fairly thin slices - you’ll want at least 6 good ones.
Next, add some coconut oil to the pan, a few apple slices, and pour the pancake batter over the apple rings so they’re fully covered. Cook for around 5 minutes, or until the edges are fully cooked, and flip. Cook for 2-3 more minutes or until set. Continue until you’ve used up all the batter.
Now serve it up! Top it with homemade jam, nut butter, sweetener, fruit or anything else that you like! I topped mine with some homemade granola and fresh ground peanut butter.
This is a really fun breakfast that’s perfect for the weekend. All the ingredients I used were found in bulk so it was totally waste free - enjoy!
