The device clips on to a pot of water then heats up the water and keeps the water swirling in a gentle motion. It maintains the temperature perfectly throughout the cooking time. Just set temperature and length of time and done. You will need a vacuum sealer bag imo. Some might say you don't but I think you need it. A vacuum sealer also lets you incorporate seasoning into the steak. I layered onion, garlic, and thyme on both sides of the steak and then sealed it tight. After the sous vide is done you must then season the steak with salt and pepper, then give it a short sear on both sides. Then you have perfect steak.
