Finally on my way home from spending a few days in Texas with my family (that's my dad to my right - my mom took the photo) and having my baby shower. Feeling / looking more and more pregnant by the day. Currently 30 weeks pregnant! Time is flying! O_O
Oh. My gosh. Pre-pregnancy body and now at #29weekspregnant. Otherwise, I'll be more active here once I'm back on my fitness journey. Midwife advised me, again, to keep walks short and no heavy lifting (not that I was doing much of either to begin with, honestly) .. So.. Yeah. 😩
I've been hearing so many good things about @flavorgod and finally decided to try some out - the pizza one, naturally. 🍕🍕 And OMG, yes. So. Much. Yes. I'm still trying to figure out what else in going to use this on, but today I used it on my almond flour/parmesan "breaded" chicken (and on the green beans... Because pizza). I am one happy pregnant lady right now. #givemeallthepizza #flavorgod #winning
The final product (Almond meal/parmesan crusted eggplant pizza) ! Here's the recipe: ❤ What you’ll need: ❤1/2 Eggplant ❤1 Egg ❤1/2 cup of almond meal / flour (or just grind some up in a food processor) ❤1/2 cup ground parmesan cheese ❤Seasonings (Salt, pepper, garlic powder, etc) ❤Marinara Sauce ❤Cheese (mozzarella, provolone…whatever floats your boat) 👉👉 Recipe: 💕 Pre-heat oven to 400 degrees (F). 💕Mix almond flour or meal and parmesan cheese and add various seasonings (garlic powder, oregano, etc). Set aside in shallow bowl that is wide enough to fit eggplant slices. 💕Cut the eggplant into slices that are 1/4th-1/2 of an inch thick. Being a picky-eater myself, 1/4th of an inch works better for me. Just keep in mind that the thicker it is, the longer you will need to cook it… 💕Coat eggplant slices with raw, scrambled egg. 💕“Bread” entire eggplant slice in seasoned almond meal/flour and parmesan cheese mixture. Set aside. 💕Pre-heat pan on med/high heat. Add oil (I used Grapeseed oil, but coconut or avocado oil is a good option as well). 💕Add eggplant slices to hot pan. Cook until both sides are browned. 💕Place pan-cooked eggplant slices on a baking sheet — top with marinara sauce, cheese and pepperoni. 💕Broil in oven (should be pre-heated by now) for about 5–10 minutes or until cheese is melted and, ideally, browned. 💕Enjoy!
Oh you know, just growing a watermelon. 🍉 Feeling exhausted... But baby has been super active today (which maybe is related? I have no idea...). I know, this "green smoothie" isnt very green... And kinda looks like a chocolate milk shake... And let's be honest, I kind of wished it was! BUT, it was delicious as-is, and by the end of it, I didn't even want a chocolate milk shake (take THAT, #pregnancycravings). I didn't do the best job at measuring everything, but I do know I added at least 1.5-2 cups of spinach. I also used frozen raspberries and strawberries, so I didn't have to add any ice. The vanilla extract is optional... But I think it makes a difference. And finally, I only added a small amount of whole cream - helps with the overall taste. Would have used Greek yogurt, but I didn't have any! Enjoy!
Lately my biggest inspirations have been #fitmoms like @fitmom_fitbritt. 💕💕💕 Now that I'm experiencing pregnancy for the first time, I KNOW the struggle! 😩🍕🍩🍨🍝🍟🍔 So, as some incredible motivation for you... Yes! I KNOW how easy it is to be tempted to just not work out... Or not eat right because you just don't feel good or you had a bad day. But that's life! You're going to have good days where you're super motivated and energized... And you're going to have crappy days where you feel defeated and tired. But in order to reach your goals, you have to... Wait for it... DO IT ANYWAYS. Don't even THINK about it. Just start. Just get up and go. In fact, on your worst days, this is even more important. Train yourself and your mind to ignore whatever obstacles life throws at you and JUST DO IT. And the best part? If you were feeling crappy before, at least a small part of you is likely to feel just a little better from having accomplished something, no matter how big or small. 💕

Today was kind of an eat-all-the-things kind of day. I feel like some version of my morning sickness is back... As in, if I don't eat, eat, eat... I feel like crap. PS - This is that sugar-free ice cream I posted a few weeks ago. Just strawberries, whole cream, stevia and a little vanilla extract mixed in a food processor. 🍓🍨💕 #pregnancyjourney #26weekspregnant

Extremely thankful that I live in the mountains and there are no nearby donut shops that are open. If I were still in Los Angeles, I'd have a legitimate problem. #thestruggleisreal
Also, my little alien must be happy because right after I stuffed my face with zucchini lasagna (see previous post), this started happening. #babykicks 💕
Finally grew some balls (lady balls, of course) and decided to give zucchini lasagna a try! I once tried zucchini noodles and wasn't a fan, so I've been skeptical...but guess what? I LOVE IT! Although anything topped with copious amounts of cheese is likely to be good. Anyways... I didn't follow a traditional recipe for lasagna, because like my previous post said, I needed Italian food RTFN, not three hours from now... Although this did take 45 min in the oven. *shrug* This is what I did, more or less: ❤ Sliced three yellow zucchinis as thin as I could without cutting my fingers off. ❤ Added a single layer of zucchini to the bottom of the pan ❤ Added a somewhat even layer of mozzarella over that (mozzarella cheese slices because I just happened to have some). ❤ Added a layer of spaghetti sauce with meat (ground beef and store bought organic marinara sauce) ❤ Added another layer of zucchini ❤ Added copious amounts of shredded mozzarella ❤ Topped with a little dried basil to make it fancy. ❤ Baked at 350(f) for 45 min on the top shelf. Make sure to preheat oven. ❤ Then I ate it. Lots of it.
This bump is no joke, ya'll. PS - I need ITALIAN food RTFN. What are some healthy alternatives to the usual carb-parked Italian dishes? Aside from spaghetti squash... Which is nowhere to be found in these mountains. 😢 #25weekspregnant
Currently jonesing for #spaghettisquash, but my local grocery store doesn't have any. 😭 PS - You can find a ton of spaghetti squash recipes on Pinterest... Even one for chow mein!
