We did pick out some ethnicities for them during development :) We picked out some voice claims too, but the game is not dubbed, so there's no canon lol.
Nightshade: Filipino, Byakuya English Dub for the voice claim
Amos: Mexican-American, Jake Johnson (Peter B. Parker)
Mac: Indian, Long John Silver from a live action Treasure Island
Rosamel: German, Rankin-Bass Jack Frost (but picture him German in your mind)
Klaus: European? Wandering so long we don't know. He doesn't talk much.
