Living Wheat Free

Being diagnosed with a wheat intolerance at 13, 8 years ago, I found it hard to find decent recipes and products that filled the gaps left in my new diet. I have started this blog to share some of the information I have learnt since being diagnosed in the hope it helps others adjust to the dietary changes, and find exiting new products and recipes that they love. Domino's Gluten Free?

I hear that our gluten and wheat free friends in america can now order a Gluten Free Pizza from Dominos.

Although the base is Gluten and wheat free, they cannot promise it wont become contaminated at some point in prepping or cooking and for that are being slated by some. However annoying that may be for those with Coeliacs, it still benefits for those with wheat intolerance as well as anyone of a wheat or gluten free diet for a variety of other reasons.  

Lets hope it makes the jump over the pond, who knows we might see gluten free Dominos in the UK before too long

Free From Pre-made Sandwiches Have Arrived

Went into my local Sainsbury's today and found free from sandwiches right at the front, Brilliant.

Only two flavors so far; Chicken Salad and Egg and Rocket, but if they keep selling out I'm sure they will add more

Basic Marble Cake

150g: Doves Wheat Free Self Raising Flour (Or similar alternative)

1TSP: Xanthan Gum

1/2 TSP: Baking Powder

150g: Sugar

150g: Butter / Marg

3: Eggs

1 TSP: Good Vanilla Extract

3 TBSP: Coco Powder

Splash of water

Pinch of salt

Before Starting: Butter and Flour a cake tin and pre-heat oven to Gas Mark 4 / 180 c / 350 f.

1. Beat Sugar and Butter together untill light and fluffy.

2. Beat in Eggs one at a time

3. Add Vanilla Extract and Salt

4. Sift in flour and fold in

5. add two thirds of the mix to your floured cake tin

6. Add the Coco Powder to the remaining 3rd of the mix (more can be added to taste if necessary.

7. Add small amounts of water / milk to the mix until the consistency matches that of the other 2/3's

8. Add the chocolate mix to the cake tin and run a knife through it to marble the two flavors

9. Bake on gas mark 4 for around 40mins or until a wooden skewer come clean from the center of the cake

Once cool you can add a filling or frosting or leave it plain, its delicious either way

This one i halved, filled with Nutella and dusted with icing sugar

Xanthan Gum

Just a hand tip to nay new gluten or wheat free bakers. Make sure you have Xanthan Gum before you start.

IT replaces the Gluten in your baking and makes a massive difference to how your food comes out

My Favorite Bread

Over the last several years I've tried a large variety of different gluten free breads available from the supermarkets, as well as several attempts to bake my own from several different recipes.

In my opinion, Genius Gluten Free Bread, is by far the best. The new improved recipe gives the closest resemblance the doughy texture of regular wheat based breads.

Genius also offer a wider range of gluten free baked goods and is stocked in large supermarkets; including Sainsbury's, Asda and Waitrose as well as a large variety of independent stores
