I know, you I know..... For my one follower ( thank you for the follow btw) the build up for veggie of the week has been intense. Following the artichoke is no joke.... hahahahah. Anyways, I’ve decided on the banana pepper this week! It’s a go to fave of mine on everything from salads to Subway to pizza to just raw and delicious. Sooooooo..... stay tuned for some fun facts on this wonderful vegetable! Which reminds me to question you..... where is your veggie?!
Artichoke Pizza
Fabulous!!!
This is how I choose to enjoy the Artichoke sometimes! I buy the canned artichokes and mix with other veggies. This is a mix of canned artichokes, spinach, mushrooms, and banana peppers with a little fresh ground pepper. It’s a nice combo on a grill, or in a pinch, microwaved for 35 seconds. You can add cheese, or grilled chicken, or just eat as a yummy side of veggies! Now...... where’s your veggie??
Artichokes protect against heart disease and cancer, nourish the liver and digestive tract, and reduce inflammation in the body, and they are delicious.
The veggie pick of the week: The Glorious Artichoke :) So much more than an addition to spinach dip ( not that spinach artichoke isn’t delicious). First post.......what am I doing? Well, here goes nothing!
Hello world of Tumblr my name is Kathy, and this is my first Tumble (if that’s a thing). I started this page because I want to share information about veggies. So important, yet mostly ignored or bullied off of the dinner plate. The time to stop the insanity and learn about the beautiful nutrient filled foods is now! Stay tuned for a daily posting about the focus veggie of the day. Pretty soon, the veggie will become a part of daily conversation, and hopefully a part of each meal.
A few points about myself:
I am a meat eater, sorry to the vegetarians reading this, but full respect to your lifestyle.
I am a A.C.E certified health coach, so I have a little back round on the veggie topic.
Most important, I love to learn and try new things, so good bad ugly and gorgeous truths and recipes I try, will all be shared :)
