Sauvignon Blanc

Sauvignon Blanc is a white wine produced from the grape variety of the same name. In North and South America, New Zealand, and Australia, it goes by the name of that grape, and bottles tend to be labeled as Sauvignon Blanc. In France, however, that is generally not the case;

The wines of Pouilly-Fumé and Sancerre, for example, are produced from Sauvignon Blanc by law, yet they are labeled with the name of the appellation as opposed to the grape. Meanwhile, white Bordeaux (or Bordeaux Blanc) is typically a blend of Sauvignon Blanc and Semillon, with some Muscadelle as a common addition, even though those grapes won't typically be found on the front label.

Cabernet Sauvignon

The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine's aging potential. In cooler climates, Cabernet Sauvignon produces wines with black currant notes that can be accompanied by green bell pepper notes, mint and cedar, which will all become more pronounced as the wine ages. In more moderate climates, the black currant notes are often seen with black cherry and black olive notes, while in very hot climates, the currant flavours can veer towards the over-ripe and "jammy" side.

In parts of Australia, particularly the Coonawarra wine region of South Australia, Cabernet Sauvignon wines tend to have characteristic eucalyptus or menthol notes.

The Château Coufran vineyard is located to the north of Saint-Seurin-de-Cadourne, a town neighbouring Saint-Estèphe in the Pauillac area. It stretches across a hillside, with its highest point at 21 metres in altitude. It is composed of a single 76-hectare block, with soils primarily made up of gravel and clay.

Château Certan is a Bordeaux wine from the Pomerol appellation owned by the Thienpont family. The estate is 14 hectares and produces an average of 5,000 cases of the Grand vin each year. The grapes are 60% Merlot, 30% Cabernet Franc, and 10% Cabernet Sauvignon. The wine is rich and full-bodied, with aromas of blackberry, plum, chocolate, and spice. The style of the wine varies by vintage, with some vintages being better for Cabernet Franc and others being better for Merlot.
