Where a character has two ethnicities listed (eg. "Asian/Arab"), are you looking for either of those ethnicities, or biracial of those two?
Southeast Asia is not listed in the ethnicity question on the form - hoping that's a mistake and not an exclusion or being folded in with Pacific Island or East/Central Asian?

For the characters with two ethnicities listed, I'm looking for someone who is either one, or both.
And Southeast Asian not being listed is absolutely just a mistake on my part, I do not want anyone to feel as though they are excluded from auditioning. I'm taking some advice from others currently and I'll be updating this part of the form to be more inclusive later today. Thank you for pointing it out and asking!
To quickly add to this, Google Forms is not in the mood to collaborate with me at the moment so I'm having some help with editing, just to explain why there might be some delay on updates to the form.
The character document has been updated accordingly to give more specific details on the requirements, and I've also changed the / to "and/or" to hopefully help out with OPs first question.
