Could you possibly help me understand the difference between 助けて「たすけて」 and 守る「まもる」? Is 助けて more 'help me' where 守る is more 'I'll help you?'
I can see where you would think that if you encountered them in the wild, but the verbs 助ける and 守る actually have pretty different meanings:
助ける means “help” or “save” or “rescue”. Someone is struggling, and you do something to help them out of that situation or make things easier for them. You can use it for saving someone from actual danger, or just for helping them out with bland everyday things so they don’t have to do all the work.
守る means “protect” or “defend”. You’re watching over this person/thing and making sure nothing bad happens to them. Sometimes you can even “protect” abstract concepts, like ルールを守る “follow the rules” or 約束を守る “keep a promise” (because you’re upholding/defending the rules or the promise you made.)
I guess my basic sense of it is that 助ける is generally for when the bad or overwhelming thing is already happening to them and you make it better, but 守る can also be used for preventing it from happening in the first place. So you’ve probably seen 助けて! as a way to yell “Help me!” and 守る as a way to say “I won’t let anything bad happen to you” but you could also, say, offer to help someone else with 助ける.

Hey, I was wondering if you could answer this question. If I want to say 'My hobbies are reading books, watching movies and fishing.' Do you know how I should say it? I know that 'My hobby is ...' is 私の趣味は。。。ことです。 but do you perhaps know how to sum different hobbies up? Thank you!

Since all of your hobbies involve verbs, I would suggest using the ーり form. So for the hobbies you’re listing, for example, reading books, watching movies, and fishing, the sentence would become:
私の趣味は本を読んだり、映画を見たり、魚を釣りしたりです。
You could also use ーとか, or や (they're the same; や is a bit less casual) but then everything would have to be in noun form. Which means adding ーこと or や to the plain form of each verb. For example:
私の趣味は本を読むこととか、映画をみることとか、魚を釣りすることです。
私の趣味は本を読むことや、映画をみることや、魚を釣りすることです。
But both imply that you have more hobbies than you’re listing. ーとか also sounds a bit more clunky than the previous example. You could always replace ーとか or や with ーと, which would give you a “complete” list. (It would also give you a lot of とs, too, though!)
