The Perfect Vegan Butternut Squash Soup Recipe
Ingredients:
1 medium butternut squash (peeled, deseeded, and cubed)
2 tbsp olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 medium carrot, sliced
1 medium apple, peeled and chopped
4 cups vegetable broth
1 tsp ground cinnamon
½ tsp ground nutmeg
1 cup coconut milk (for extra creaminess)
Salt and pepper to taste
Pumpkin seeds (optional, for garnish)
Instructions:
Preheat your oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet, drizzle with 1 tbsp olive oil, and roast for 25–30 minutes until tender.
In a large pot, heat the remaining olive oil over medium heat. Sauté the onion, garlic, and carrot until softened, about 5 minutes.
Add the apple, roasted squash, vegetable broth, cinnamon, and nutmeg. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer it to a blender and blend in batches.
Stir in the coconut milk and season with salt and pepper. Simmer for an additional 5 minutes.
Serve warm, garnished with pumpkin seeds for a delightful crunch.
