I'm actually gonna start asking for rent. My dad's business partner is considering dropping out of the business, and my dad can't do it alone since he's not insured. This is uhhh stressful, and there haven't been many jobs this month what with the crazy weather.

so taking pictures at night in winter is impossible but i truly made an absolutely bonkers vegan italian wedding soup last night like outta this world! // for the meatballs: mix together abt ~1/2c breadcrumbs, 1 flax or chia egg, dried basil, dried thyme, chili flakes, paprika, black pepper, garlic powder and 1/2 pckg beyond meat grounds. mix together w hands until you have a thick “dough” roll into small palm sized balls. heat up a neutral oil in a pan and place your meatballs in + brown on each side (about 5-6 min per side) then let chill on a plate w/ paper towel to catch excess oil. // for the soup, chop 4 big garlic cloves and 1/2 yellow onion and sauté w olive oil til softened in a big pot. add in a big pinch of salt, black pepper, juice from half a lemon, helllla fresh thyme, a handful of chopped greens, a handful chopped parsley and about 5-6 cups of vegetable broth. then add in your meatballs, add in orzo, and let boil, then simmer covered about 10 min~ until pasta and meatballs are cooked thru. top w vegan parm! it’s ridiculously delicious and comforting 🥰🧩🌷
cooking is literally one of the best things you can do for your Brain... and more specifically cooking with care and creativity. like, using a multitude of senses all at once: your taste your smell your tactile sense... not even speaking of the dimension of Problem Solving & the joy you get from finding a perfect balance of tastes or figuring out how to level up your dish... cooking gives you the perfect opportunity to practice awareness, knowing what’s going on around you and how you can affect that. when you are making food you are literally simultaneously creating the world around you, practicing care and awareness... like literally creating a Thing that everyone needs for survival yet you can consume for pleasure and share with your loved ones? i’m here for it...

❣️zaatar focaccia w/ labneh + pickled celery
❣️miso butter grilled wild salmon w/ charred scallions + lemons
❣️grilled asparagus w/ caper parsley vinaigrette + shaved parmesan
❣️watermelon feta salad
❣️olive baguettes
❣️upside-down peach basil cake w/ honey whipped ricotta + edible flowers
+ we made a big pitcher of strawberry mint vodka seltzers!! this meal tasted and felt like summer + was shared with friends which feels amazing because it’s been so long since i’ve been able to do that

no one tells you how much of life takes practice. not just writing, painting, running, singing, etc, but practicing how to make friends. how to make the right ones. getting practiced at how to be a good friend, a good sibling, a good person. practice identifying when people haven’t earned that. learning to recognize your right to rage and, eventually, how to offer mercy. so much of life is muscle memory, and i’ve begun to realize there are so many more parts of ourselves to flex and stretch and strengthen than those we’re taught in anatomy lessons
