This Crispy Tofu Bowl is a delightful blend of flavors and textures, featuring crispy tofu, tender mixed vegetables, and fluffy quinoa. It's a satisfying and nutritious vegan meal that's easy to prepare.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 2 tablespoons cornstarch. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 teaspoon garlic powder. 1 teaspoon ginger powder. 1 cup cooked quinoa. 2 cups mixed vegetables such as bell peppers, broccoli, and carrots. 2 tablespoons olive oil. Salt and pepper to taste. Sesame seeds and green onions for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Put rice vinegar, soy sauce, ginger powder, garlic powder, and maple syrup in a bowl. Toss the cubed tofu in cornstarch until it is covered. Toss the tofu in the sauce until it's well covered. Lay the tofu out on a baking sheet that has been lined with parchment paper. If you want the tofu to get crispy and golden, bake it for 25 to 30 minutes and flip it over halfway through. Also, put olive oil in a pan and heat it over medium heat. It will take about 5 to 7 minutes of cooking after adding the mixed vegetables. Add pepper and salt to taste. Spread cooked quinoa out in bowls and top with crispy tofu and vegetables that have been sauted. Before serving, top with sliced green onions and sesame seeds.
