Father’s Day: Oatmeal Raisin Cookie Edition
happy father’s day to all those in the Chinese speaking world (8/8 Jie!) - and to all fathers alike!
decided to make my dad some oatmeal raisin cookies (with the addition of chocolate chips per my mother’s request) because they’re his favorite! my first time making these, but they are SO. GOOD. my dad claims they might be some of the best cookies I've made thus far (not that I have a long history of baking, but enough sweets to get a general idea ;)) especially because they’re not overly sweet (dad doesn’t have as big of a sweet tooth as this sugar monster here).
I used this recipe here from “live well bake often” with the following tweaks from other oatmeal cookie recipes I found online:
boil some water and throw the raisins in there, adjusting to a low simmer once the raisins have been added. let them simmer in there for around 5-10 minutes with a lid on. remove from heat and drain (set aside to dry/cool down)
if you’re like me and didn’t have any vanilla extract on hand, save some of the raisin water to throw into the batter!
preheat your oven to 350F (or about 175C) and spread your oats in a thin layer on a baking sheet and toast for about 10-15 minutes
keep on the oats as these pesky buggers might burn! my first batch of oats I toasted for 20 min per instructions online, and while I thought they tasted great, they looked and smelled a little burnt, so I made another batch and only toasted them for 12 minutes!
if you’re adding chocolate chips, I did a blend of one dark chocolate bar and one milk chocolate bar (I personally am more of a dark chocolate person)
I also like my chocolate chunky for extra ooey gooey deliciousness in each bite, so I chopped the bars up very roughly for larger chunks!

this was so touching. parents often make the biggest sacrifices for their kids, both knowingly and unknowingly to the children themselves. to choose to give their daughter a shot at life rather than aborting her was incredibly sad, but also beautiful. so glad they finally got to reunite after all those years
