Winter Recipes: Chilean empanadas
For nearly all of my life, I’ve been told about my grandmother’s beef empanadas. My mother has told me how her mom, who was Chilean, would make huge batches during the holidays and how my grandfather would just eat one after the other. Finally my mom was able to show me how to make them.
I found a recipe that nearly mirrors the family one, except a large amount of vegetable shortening was used as oil. These are by no means healthiest empanadas but OH MY are they delicious. The best part though? Dipping them into sugar before enjoying every delectable bite. Yes, beef empanadas with sugar. Sweet gluttony, how amazing these are.
