She super gives off a 'bulbasaur' and other soft, fluffy Pokémon vibes.

Get ready for this najor headcanon: I wanted to make a few of toh characters in pokeverse. Amity gives off major poison-type vibes, and also a bit o dark and ghost type. Grimer was a must have, because it looks a lot like abominations. I went for Shuppet because it feeds on negative feelings – and the Blight's mansion is crowded with those, so it wouldn't be hard for Amity to get one for herself. Eevee is my most complex one: eevees aren't easy to find in the wild, since they are desirable/popular pokémons, Odalia and Alador bought one for each of their children as 'starters'. Emira and Edric managed to evolve theirs to Umbreon and Espeon ( I picked those two eeveelutions mostly because of the illusion track on TOH ) . Their parents are proud, because Espeon and Umbreon evolve from highlevel friendship, which is reached by earning the trust of eevee, plus battle experience and hard training. Seeing that the twins got praised for such accomplishment, Amity wants either an Umbreon or Espeon too.

Turns out, Amity is very alone, she has no real friends, she was forced to cut ties with her only real friend (Willow, who hates her after that) she ever had, her siblings are twins and have each other, and her parents are extremely severe (and most likely abusive).

She is alone and all she has is that eevee.

She cares for it, loves it.

Eevee is her only and true friend.

Eevees, however, evolve into Sylveon when they are /loved/. And her eevee will eventually evolve into a Sylveon, because it is given a LOT of love, and that will make Odalia and Alador furious, because they see love as weakness since it's earned from affection and care towards the Pokémon, while 'friendship' is earned by getting the Pokémon's trust and respect, which, for them, is equal to power.
