Our lovely guide Wass at the Thai Farm Cooking School, Chiang Mai. A perfect way to spend our last day in Thailand.
Thai Farm Cooking School
Our last day in Thailand was spent perfectly with a visit to a Thai cooking school located on a rural farm a few miles out of the centre of Chiang Mai. After a quick coffee, we were picked up from our hostel (called the hug hostel, and yes it was as cute as it sounds). Our guide and teacher for the day was a lovely lady called Wass whose passion and energy rubbed of on the whole group . The day started off with a early morning visit to a large food market selling every herb, spice, fruit and vegetable under the sun; Miss Wass spoke us through the ingredients we would be using throughout the day and then gave us time to explore. Arriving at the farm it was clear we were at the most picturesque location with vegetable patches lining the lawn, fruit trees dotted along a small stream and a cat named chicken basking in the sunshine. We were taken on a walk through the farms herb garden, and given the chance to sample all the organically produced produce they grew themselves on the farm which would later be used to add flavour to our dishes. There was a group of 10 of us and we each individually worked our way through five courses under the watchful eye of Wass who spoke through every course with detail and through demonstrations. The whole day, pick ups and drop of included, cost us £25 and was worth every penny. I spent the day in my element, happy to be back in the kitchen - pinny and all - Grace slightly newer to the cooking life (I think frozen pizza is sometimes a struggle, thank god she's going catered at uni) worked through the recipes enthusiastically yet somewhat awkwardly. Several times this was noticed by a very amused French man who was aware that his every move was being mirrored by her. "You cook much at home?" he asked G, heavy on the sarcasm and the endearing looks. A highlight was making our very own curry paste using all fresh ingredients (and a lot of elbow crease via pestle and mortar) to later be used as the base of our homemade curries. Having tried mango sticky rice on several occasions during our time in Thailand (it's really the only desert they have to offer, cries my sweet tooth) both of us had been a bit disappointed, it's often very heavy and sickly sweet, but making it ourselves in the little wooden kitchen with fresh coconut milk, we were impressed that our tropical rice pud' was really rather good. After every course we heartily ate through our creations, each time slowly falling further into a happy little food coma. At the end of the day, Wass gave us time to ask her any questions and gave us all a little recipe book to take home (family and friends expect lots of Thai creations, you can thank us later).
