Ingredients: 2 cups cooked jasmine rice. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1/2 cup diced onion. 1/2 cup diced carrots. 1/2 cup frozen peas. 2 eggs, beaten. 3 tablespoons soy sauce. 1/2 teaspoon sesame oil. Salt and pepper to taste. Green onions, for garnish.
Instructions: In a big skillet or wok, heat up one tablespoon of vegetable oil on medium-high heat. Add the minced garlic and cook it for 30 seconds, or until it becomes fragrant. Stir-fry the chopped onion and carrots for three to four minutes, or until they start to soften. Pour the beaten eggs into the skillet from the other side after pushing the vegetables to one side. Cook the eggs through by scrambling them. To the skillet, add the cooked jasmine rice and frozen peas. Stir-fry all ingredients for two to three minutes. Over the fried rice, drizzle some sesame oil and soy sauce. To coat the rice and vegetables evenly, thoroughly mix. To taste, add salt and pepper for seasoning. Stir-fry for a further two to three minutes, or until everything is thoroughly heated and mixed. Add chopped green onions as a garnish. Enjoy while hot!
