Guess who’s back? Back again.
I was 22 the last time I posted here. I’m almost 27 now and 10 lbs. heavier than before I started Keto the first time. I’m going to give this one more try, and I’ll write about it here so that 1) I have people to laugh with/at me and 2) I can be my own accountabilibuddy. Wish me luck!
Maybe if I start posting all my meals I'll stop eating things I'm ashamed of. Here's last nights very keto legal dinner.
This weekend was a dietary nightmare. Pizza crust, lava cakes, and carrot cake galore. I fell off the wagon hard. Tomorrow I'm back to my low carb ways, but right now I'm paying the price with some of the worst heartburn I've ever experienced. Lesson learned.
My boyfriend helped me with this one. We made pork rind and Parmesan crusted pork chops with broccoli. What's not to love about a boy who can cook keto meals?
I made these last night— I’ve seen a lot of recipes for egg-muffin-cup-things like this for a while and just sort of winged it last night. Yummy as they are, they just don’t keep me full until lunch. I had two this morning but was crashing around 11 am. If you want to give them a try, just grease a muffin tin, add sliced ham as a liner and then add cheese, 3 eggs that have been whisked with a few tbsp heavy cream, and whatever veggies you want. Cook at 350 for 25 mins, then add more cheese and cook 5 more mins. I freeze the leftovers and microwave them for 90 seconds in the morning. Enjoy!
Keto work snacks anyone? I was eating blackberries and almonds but I'm a little broke these days.
Low carb carrot cake!
Made this tonight- it was amazing! 5g carbs. 550 cals. I ate 1/2 and was full.
1/3 cup ground almonds 1/5 cup granulated Splenda 1 tsp cinnamon 2 crushed walnuts Drop of vanilla essence Pinch or two of baking powder 1 egg 2 tsp butter
Mix all in a mug. Microwave for 90 seconds
Cut in half. Let it dry out for 15 mins.
Mix mascarpone with a tsp of Splenda.
Spread in middle and on top.
Nom.
I must try this. I'm a little confused how it can be carrot cake without any carrots, but maybe I'll add a little if I'm really missing it.
I finally made one of the recipes I've been meaning to try on Pinterest. It's just butter, lemons, shrimp and Italian seasoning. It was delicious!

I just realized the cough drops I've been eating day and night all week have corn syrup in them. Keto fail! Oh well, we all make mistakes I guess. Why don't they make bacon lozenges?

Does anyone else feel rude constantly turning down sweets your coworkers and friends offer you? I don't divulge my diet to everyone, so it's not as if they would know any better, but why is it so criminal to turn down a bear claw?
