A lot of their samples are sourced from MP3s rather than direct vinyl transfers.

A poorly compressed MP3, then that same MP3 pressed to vinyl. Vinyl distortion causes the high-end to be distorted and hissy due to side-effects of the playback process, thus appearing to compensate for the low quality compression removing the high-end.
