I bought some cool food today!! First is fried ice-cream, with matcha and fresh strawberries, it was so good! I have to go more often, it just opened, it can substitute bubble tea since the place is always so full now The second is a red bean mooncake, I had them once when a family member brought them from a trip and they sell a lot of flavors over here! It's heavy though, I wish someone would eat with me :/
I know this isn't a very healthy bento but there's not a lot of food in the fridge and tomorrow is Friday ;;; - Turkey sausages w white cheese - Coconut - Fish croquettes
Late night bento prep. Really wish I had better lights! - Cherry tomatoes with corn - Whole grain bread - Carrot sticks - Mushroom, spinach and egg stir fry
Lunch for tomorrow at the office! White bread, chili con carne, cherry tomatoes with carrots and pomegranate seeds. Pretty hurried up, been getting home so late! I got a new bento box btw, it's pretty similar to the other one but has European cutlery. They sell these in stores here! Perhaps I'll buy a pretty one when I get paid hmmm

This is a pretty regional bento box! I still have some pictures I took during finals season and didn’t have time to post so I’ll show them too now.

Stir fry rice with veggies, ham, egg and seafood
Tortilla de patatas - Spanish omelette recipe
Ingredients:
700g potatoes
200g onions
6-7 eggs
Olive oil
Salt
Steps:
Peel and wash the potatoes either diced, in slices or whichever other way you prefer. Peel and cut the onion as well.
In a wide pan, heat up a generous amount of olive oil and, when hot, fry the potatoes and onions together. If the onion is thinly cut, add them a little after the potatoes to avoid excessive browning.
While they get fried, mix the eggs in a bowl and add a pinch of salt to taste.
Once fried, retire the onions and potatoes from the pan and let the excess oil drip away.
Add the fried potatoes + onion to the eggs and mix them together. Leave them for a couple of minutes so as to allow the potatoes to soak up some of the eggs.
It's recommended to use a 24cm diameter pan to make the omelette. A smaller one will make the omelette thicker, and a wider one more thin. Put it on medium heat and add a bit of olive oil.
When it heats up, pour over it the eggs and potatoes + onion mix, and wait for the bottom layer to set but without allowing it to burn.
Unstick the bottom layer slightly with a spatula or similar and, covering the pan with a wide dish, turn the omelette around. Slide it back into the pan so the uncooked half is at the bottom now, and wait for it to fully set. Turn it around more times if necessary until done.

Made chicken Tikka Masala today for the first time! My family really liked it, but I made a bit too much! Someone come eat the leftovers pls
It’s the holidays!! That means I won’t be making bentos regularly until September! However, I’ll post some cooking experiments and when I make bentos for day trips!
On the pic, homemade yogurt parfait! It’s very easy, just layer pureed mixed berries, yogurt and any kind of granola you like. I like to buy big containers of yogurt and make them ahead. If you add the granola too soon it’ll get soggy though!
