3 weeks on keto...
So, it has been three weeks now. After the first one, I have lost a few cm off of my hips and waist. But that's all 😦. I weighed myself for the first time in over a year...never seen this number on the scale 😢 Alright but this hopefully motivates me. I haven't been drinking enough lately and shark week is here, too. If upping my water intake won't help, I will also avoid erithryt. Although I seem to be in ketosis all the time. Let's hope that one of these things is the issue for not losing! Otherwise, apparently keto isn't working for me this time.
Keto food These are some meals I have eaten during the last days. 1. Pancakes from protein powder with crème fraîche and blue berries 2. 'Kaiserschmarren' from protein powder with some powder erithrit 3. Fried pan cheese sticks with fried parshnip root (only 6g carbs/100g!!! tastes like sweet potatoes 😍) and garlic cream (made from fresh garlic, crème fraîche and mayo)
My first keto success! I attempted to make DF Chocolate PB fat bombs before this and they were absolutely horrible. 😷 This success has me feeling like I can actually do this. I can do Keto, succeed, and not feel deprived. I will thrive. I adapted the recipe from ketosizeme.com 💙
Ingredients-
2 Cups Almond Flour 1 Cup Coconut Cream 2 Large Eggs ¼ Cup of Kerrygold Salted Butter (melted) 2 tsp NuNaturals Stevia Drops (will use less next time) 1 tsp Baking Powder ½ Cup Fresh Blueberries 1 T Fresh Lemon Juice ¼ tsp Lemon Zest 3 drops Lemon Essential Oil (optional)
Instructions-
-Preheat oven to 350 -Zest lemon and melt butter -Crack eggs into a large mixing bowl and whisk until well mixed -Add all other ingredients into the mixing bowl with eggs and mix until well combined -Pour muffins into 12 silicone baking cups -Bake for 25-30 minutes (until golden brown and a toothpick comes out clean)

Finding old photos makes me simultaneously cringe and feel so proud of myself. What makes the first photo even worse is that I was in the drive thru for a plate of food that’s approximately 2,000-2,500 calories and hell knows how much fat. Now I drive place that place on a weekly basis and pay it no mind. 😬
These brownies turned out so good! I added a scoop of my chocolate frosted cupcake protein powder to it and yum yum yum. Only 2 net carbs per brownie.
Low carb pizza/tarte flambée/Flammkuchen! This is what I ate for dinner yesterday and it was SO delicious! 😍 It’s made of low carb pizza dough (Lizza), crème fraîche, mozzarella and Tilsiter cheese, onions and some vegetarian meat slices. I was only able to eat ¾ of it, so filling! It had only about 8g carbs. I will do this again for sure! Especially the onions ❤
